Chaya Glatt has a brand strategy course. I never took it, but it seems to be amazing, I think with this course you would learn all the tips and rules you can use with packaging.
I took Chaya’s course. It is really fabulous, but it doesn’t focus on packaging design at all - it is not a design course; rather a strategy course focused on building a brand so that it targets correct customers, understands their needs, builds customer loyalty, and helps brands solve branding problems like their positioning and architecture. (Part of it does focus on recommending designs that will work for the target audience and which designs would work for different types of brands, but that’s not the main topic covered).
To me it sounds like you’re looking for a very specific course on packaging design in-depth. I don’t know of any at the moment, but was looking into it recently. So if you do find one, maybe let us know 
if I were you I would approach Yael Miller, or someone who does a lot of packaging and ask if they would give you a 1:1 crash course for 2-3 hours focusing on theory etc.
