Hi- has anyone ever ran into the issue from indesign that when exporting to pdf, the file will automatically show a little piece from the other side of a spread- even when there are no bleeds even set up?

Bleeds could be set up both at the time of exporting, and when the document is first set up. Could be you had bleeds set up in the original New document setup window, and then when you went to export it you had it set to Use Doc Settings for the bleed, and that would capture a bleed. Check it out and see if that is the issue…
